Today is my mother's birthday, you can see a photo of her here if you like. So, I decided I'd post one of her recipes from the collection. This cake actually starts with a mix but really... who cares? The final cake is delicious and there's enough mixing and ingredients involved to fool yourself into thinking it came from scratch. (smile) Jello no longer produces Butter Pecan cook-and-serve/pie pudding but their Butterscotch instant pudding makes a great substitute. I've tried the special edition 'Turtle' pudding in stores right now near where I live - delish. I think I may actually play around with this recipe some and post the results over on my personal blog. Love it.
